Vichy pastilles are certainly the most famous sweets made in the Allier in the world. First produced in 1825, they were greatly appreciated by the Empress Eugenie and became recognized for their originality by royal decree. The sweets, renowned for their digestive properties, are made with mineral salts extracted from the Vichy thermal waters, which are dried and crushed before being mixed with sugar and glucose. The next stage is the addition, by entirely automated methods, of the pastille’s characteristic natural flavouring, mint, lemon or aniseed. A good way to combine health and pleasure !
