Jacques Décoret, who has been awarded a Michelin star, is continually trying out new ideas for recipes with an all- consuming passion. An enthusiastic ambassador of local products, Jacques Décoret never hesitates to combine them with ingredients from other continents: guinea fowl and avocado from Mexico, trout and Chinese radish, demonstrating the extent of his knowledge and the alchemy of balanced flavoursome ingredients.
Those who would like to try the extensive range of his dishes should choose the “Confiance JD” (tasting menu), which offers among other things: foie gras, sea bass, fillet of Charolais beef with basmati rice served in a tube of caramel, coconut milk served with a coulis of mangoes from the Ivory Coast (depends on season).
Jacques Décoret’s works of art stimulate not only the taste buds but also the curiosity, as customers try to read the master’s mind and find out where his inspiration comes from: the sugared almond nestling under delicious crispy pastry with almond milk ice cream, pizza ingredients presented differently to transform their taste, liquid mozzarella and olive sorbet !
